Who? Josh Hyland: Most nights will find Chef Josh Hyland behind the kitchen counter, producing special menu items and masterfully preparing Ukiah Brewing Company's menu for our diners. A graduate of Great Lakes Culinary Institute, Josh refined his skills at the reknowned Boathouse Restaurant in Traverse City, Michigan before moving to Ukiah in 2005 -- returning to his roots -- his great-grandmother is Molly Orr, a celebrity in the area in the 1930s. Ellery Clark: Mendocino County's Ellery Clark joined Ukiah Brewing as Executive Chef in early 2007. Ellery's culinary talent extends from Italian to Thai cuisines. From a perfectly grilled ribeye steak to his vegetarian lasagna -- his artisanry is evident in taste and presentation. Ellery's unique and savory specials are spiced masterfully and, using seasonal veggies, all organic (of course) ingredients, are a pleasure to eat, view, and watch being put together. Also a seasoned bassist, harmonica player and vocalist, Ellery plays with local reggae favorites Rootstock and a few other musical projects. Come say "Hi!". Phil Castro: Recently joining our team is Chef Phil Castro, chef at many popular local eateries over the last several years.
